More recently, the idea of traveling around Russia for the sake of gastronomic pleasures seemed insane. If you are travelling for delicious food, then you go to Europe, Southeast Asia or the USA, where Michelin-starred restaurants are presented, and exotic dishes are served. Since then, there have been sanctions and import substitution, and many restaurants have opened in Russia, which have already received international awards and are included in the lists of the best establishments in the world.
We realized that local cuisine, if skillfully developed and presented, can be interesting and tasty, and a reason to make a separate trip.
For example, St. Petersburg sets trends and tests concepts, while Moscow brings them to a new level. Vegan cafes and unusual pastry shops, biodynamic wine bars and ciderreries, gastropubs and nostalgic wine glasses - it seems that in Moscow and St. Petersburg you can now find any concept and cuisine of the world.
Many restaurants invite famous chefs from other countries and regions on tour - now you can taste dishes from restaurants with several Michelin stars without traveling abroad. Russian gastronomic festivals also play an important role, bringing together chefs, restaurateurs and gastronomic critics from all over the world.
Gastrotourism is actively developing in the regions.
They lure people to Rostov-on-Don with local specialties like Don fish soup and crayfish. In addition, it is worth going to local wine bars, gastro bars, as well as third wave coffee shops, where the preparation of an invigorating drink is brought to the level of art - they annually get into restaurant ratings and take prize-winning places.
It is worth going to Krasnodar not only for hearty Kuban cuisine, but also for the local markets, the counters of which are bursting with juicy seasonal fruits and vegetables. In Voronezh, you can try the freshest steaks and burgers from local beef, which is in demand in the kitchens of the best Russian meat restaurants.
In addition, there is a wonderful covered market in the city center and outstanding pastry shops, coffee shops and gastro bars. Sochi, Murmansk and Vladivostok finally remembered the proximity of the sea and the availability of their own seafood and fish. And the proximity to the borders has formed its own gastronomic traditions in each of these cities.
Sochi cuisine borrowed a lot from the Adyghe, Georgian and Armenian cuisines, Murmansk - from neighboring Scandinavia and from the indigenous peoples of the North, Vladivostok borrowed a lot from Korean and Japanese cuisine. Yekaterinburg, Kazan, Nizhny Novgorod and Novosibirsk are also developing their own gastronomy with an eye on local products and regional dishes.
With the opening of new private wineries and the revival of Soviet production in Russia, wine tourism began to develop actively.
Wineries are no longer closed production facilities, you can come here on an excursion, walk through the workshops, visit the storage facilities and taste different types of wine. Wine tourism is actively developing in Crimea, Krasnodar Territory and Rostov Region. The wineries not only organize guided tours and tastings, but also offer accommodation in their own guest houses, great restaurants with farm food, and master classes.
